Mustard Recipe


You have bought mustard powder? Nice! This means you can prepare mustard at home, a spicy delicious condiment. To prepare mustard put sugar and salt into hot water and boil it. Drain the solution and cool it down to 60C. Then pour it into the mustard powder and mix it to homogeneous mass. Put the mass into a warm place for 12-15 hours for “maturing”. Then add seasoned vinegar and oil and mix carefully. To get mustard of high quality you have to give it time for ”maturing” and let it stay for a day more. Ready mustard shall be kept in a cool place. The flavor variety of mustard types depends on the contents of the seasoned vinegar, the amount of sugar, salt and oil. The ingredients of seasoned vinegar can include Jamaica pepper and Cayenne pepper, bay leaf and cinnamon, cloves and nutmeg, cardamom and garlic. It is not difficult to prepare seasoned vinegar. Add spices according to your taste into 80 % vinegar and hold it out for a day. The approximate amount of spices for a liter of vinegar is 10-12 g. Now let your fantasy work, and you will invent a new type of mustard. For the beginning try to prepare the classical Russian mustard, original English mustard and Remulad sauce with mustard (Yugoslavian quisine):

Strong wine vinegar - 50g.

Mustard powder - 5g.

Oil - 85 g

Lemon peel.

Sugar - 5g.

80% vinegar- 20 ml

 

Caviar - 10g.

Cayenne pepper, bay leaf - 0,5 g. each
